Pairing Suggestions
Pairing and serving our cheeses like any cheese is almost limitless in its possibilities. Our aged cheeses are best served at room temperature to allow all of the flavors and aromas to develop out of cold storage. Here are some of our favorite ways to enjoy our different products.
Verano - a classic Verano pairing might include cherry jam, fresh figs, quince butter, dried apricots, marcona almonds, and crusty bread.
Invierno - this rich cheese pairs beautifully with fresh fruit like apple, grapes, nectarines, or with a spicy pepper jam or preserve.
Reserve Two-Year Aged Invierno - this well aged and fully flavor developed cheese is delicious with honey drizzled over it or even a balsamic glaze.
Marinated Sheep Cheese - this cheese needs little other than a crusty bread or crackers, but becomes a quintessential summer meal when paired with fresh tomato, basil and even a little balsamic vinegar.
Fromage Blanc - this cheese is so versatile. You can spread it thick over a crusty sourdough toast with blackberry jam and sprigs of fresh basil, or use it in cooking to create luscious and creamy pasta dishes. It also makes an epic cheesecake!
Ricotta Lana - this pure sheep's milk cheese is delicate and divine. It makes the best lasagna or stuffed shells, but is also delicious whipped up with lemon or orange peel and honey and served with fresh peaches and shortbread cookies.
Skyr - pair with your favorite granola, maple syrup, fruit preserve, blend into a smoothie, or add grated and strained cucumber, garlic and dill for a savory dip!
